If you’re anything like us, you could eat chocolate for breakfast, lunch, and dinner.

You don’t, obviously, but you could.

As Linda Grayson once wisely stated, “There is nothing better than a friend, unless it is a friend with chocolate.”

That’s how we feel, anyway.

But chocolate is not chocolate is not chocolate.

The Skinny on Chocolate

General rules of thumb:

  • Eating quality organic, dark chocolate 70% or higher, (with no soy lecithin) in reasonable portions has nutrients and benefits. But, yes, it also has fat and sugar, so don’t have it for breakfast, lunch, and dinner.
  • Any other “chocolate” should be seen as candy — even if it’s vegan — and treated as such. Candy = an occasional treat.

But even the darkest chocolate remains a roasted — albeit minimally — processed food. The thing with normal chocolate is that it is roasted, meaning it loses most of its superfood qualities, and some of its nutrients and enzymatic properties.

So, the holy grail is raw cacao or raw chocolate.

What is Raw Chocolate?

In the simplest terms, it’s chocolate in its purest, un-roasted form. Raw chocolate is made by grinding the raw cacao beans and never heating them above 42 degrees celsius (the temperature you’re not to surpass when preparing raw food.) This gentle preparation reveals the cacao’s beauty, strength and magical subtleties.

And there’s a reason why cacao, a.k.a. Theobromine, translates to “food of the gods.”
