I may have eventually left LA, but not without taking a deep and undying love for tacos with me. These refried black bean beauties are healthy, hearty, and weeknight-friendly — your new go-to for a plant-based Taco Tuesday.

As some of you know, I spent my 20s living in LA. Not the right fit for me for about a million reasons — the industry, the flakiness, and the fact that your dentist, veterinarian, and hairdresser are also struggling actors. Also, I’m more of a “cozy bookshop and farmer’s market” kind of gal than a “networking at a rooftop launch party” type.
But one thing LA did give me? A deep and undying love for tacos.
Tacos are a staple in Southern California — and for good reason. They’re fast, customizable, and often bursting with fresh, bold flavors thanks to the beautiful Mexican influence woven into the culinary scene.
Fast forward to now, and I’m living my cozy, crunchy mama life in New Hampshire — still obsessed with tacos, but with a few healthy swaps to keep things plant-powered and digestion-friendly. Enter: Refried Black Bean Tacos — my go-to for a nutritious and satisfying Taco Tuesday (or let’s be real, Taco Anyday).

Ready to bring the taco truck to your kitchen? Here’s how to whip up these wholesome, flavor-packed refried black bean tacos — no frying required.

Sauté your onion and garlic in a splash of veggie broth until fragrant. No oil needed — we’re keeping it light so you can load up on guac guilt-free.
Add the beans, cumin, paprika, and another splash of broth. Mash it all up with a fork or potato masher. You want a creamy texture, but with some chunks for interest.
Finish with lime juice and salt. Taste test. Probably taste test again.
