Quinoa. It’s healthy, it’s trendy, and… if we’re being honest, it can taste like sadness if you don’t treat it right. But what if I told you there’s a way to actually love quinoa?

Quinoa. It’s healthy, it’s trendy, and… if we’re being honest, it can taste like sadness if you don’t treat it right.

But what if I told you there’s a way to actually love quinoa? Like crave-worthy, meal-prep-it-all-week kind of love?

Well, friends, I’m here to introduce you to the quinoa salad that just might change your whole perspective on this so-called “superfood.”

Why So Many People Think They Don’t Like Quinoa

Let’s face it — quinoa has a reputation problem. Too often it’s served up mushy, bland, and sad. But quinoa done right? It’s nutty, fluffy, slightly crunchy, and makes the perfect base for a high-protein, plant-powered meal. (Especially when you bring lentils to the party.)

So, I’d like to take this opportunity to introduce you to the salad that’s goin’ to convert all your quinoa skeptics…

This isn’t your typical quinoa salad. It’s:

  • High in protein (thanks to quinoa and lentils)
  • Loaded with flavor (herbs! spices! tangy sauerkraut!)
  • Perfect for busy people looking for an energizing, make-ahead lunch
  • Rich in healthy fats, probiotics, and plant-based iron
  • Vegan and gluten-free, of course

And yes, even my toddlers ate it. So it’s officially kid-friendly. (Though one of ’em was trying to pick out the herbs… #reallife)

What Makes this Quinoa Salad Special?

Without spoiling all the magic from the video, I’ll say this: the secret is in the textures, balance, and a lemony tahini dressing that ties it all together like a cozy knit sweater.

There’s crunch. There’s zing. There’s depth. And there’s no “what-is-this-health-food” aftertaste.

You’ll find:

  • Fresh herbs
  • Roasted nuts
  • A little sweet, a little tang
  • A whole lotta flavor

And yes — quinoa that’s actually good.

This salad is perfect for meal prep, packs beautifully for picnics or school lunches, it balances blood sugar and keeps you full, and… makes you feel like a domestic goddess without actually trying. I could go on and on, but let’s get into the video, and give quinoa the chance it deserves.

An *Actually* Exciting Quinoa Salad

It’s fast, easy, and filled with hidden (nerdy) nutrition like lemon that helps your bod absorb the iron from the lentils.

Prep time

10 min.

Cook time

10-12 min.

Total time

20 min.

Ingredients

For the salad:

  • Cooked quinoa (if it’s mushy or overcooked, you lose)
  • Green or black lentils
  • Any veggies or roasted veggies you like that are in season 
  • sauerkraut
  • A handful of fresh parsley and mint, chopped
  • A small shallot, finely minced (You could totally do red onion here if you prefer or are like, “Ann… I don’t have shallots in my house.”)
  • Roasted almonds or pistachios 

For the dressing: 

  • Grated or minced garlic
  • Zest and juice of a lemon
  • Some tahini 
  • A touch of maple syrup
  • Salt, pepper, and a pinch of cumin or smoked paprika (or whatever you like in salad dressings)

Instructions

  • Make quinoa, and don’t overcook (usually the package helps here)
  • Use canned lentils or make ’em yourself
  • Chop veg and herbs
  • Make dressing
  • Toss all together with gusto

Notes & Tips

So, look… I know there’s no measurements here. That is because I’m a home cook, not a chef. (Much to my analytical, INTJ Meyer’s Briggs husband’s chagrin because when I make something good, he’s like, “Did you use a recipe? How are you going to recreate it then?” He has a point, but again, you gotta be an instinctual ninja in the kitchen when you’ve got hungry mouths to feed.) And plus, you have to go with what’s right for you and your family. You may want more herbs and less quinoa. You may need more maple and less tahini. Make it your own, and don’t be afraid to experiment.
