Because – vegan butter. Can you believe it?

It’s as creamy, salty, and versatile as its non-vegan counterpart, only without the heart attack. Huzzah!

What’s more, this one’s homemade, easy to make, and contains only whole and healthy ingredients.

Now, maybe the concept of vegan butter is old hat to you. It’s true that you can find non-dairy butters in the shops pretty easily these days. But the thing is, they’re usually chock full of soy lecithin, emulsifiers, fillers, palm oil or carrageenan. Or all of the above.

And let’s not even mention that non-food known as margarine. *Shudder*

No such nasties in this divine recipe. As you’ll see, it’s made of only the purest and most health-giving ingredients. It provides your body with good fats, plus it’s easily digestible, even if you do go a little overboard (which may happen if you’ve got some tasty and toasty bread to pair it with).

The Genius Behind the Butter: Oona Bee Crudivine

May we introduce you to the delightful Oona Bee.

She’s a raw vegan pioneer and purveyor of healthy vegan cheeses. Her line of nut cheeses, Les Crudivins, has got all of veggie Paris salivating. Everybody is gleefully waiting for the moment when her creations become available in organic shops. For now, Ann and I have taken to stalking her at all the vegan festivals, hoping for tasting sessions. 🙂

Today, Oona the non-dairy queen shares her coveted butter recipe. We tried it at VeggieWorld a few months ago and went absolutely mental for it. We decided we just had to share this game-changing recipe with our dear readers, and were thrilled that Oona was up for it.

 

Easy Raw Vegan Butter

Easy Raw Vegan Butter

Ingredients

  • 1/2 cup/100g deodorised coconut oil
  • 1/2 cup/75g cashew nuts, soaked in water for at least 2 hours, drained
  • 1/4 cup/60ml any nut milk
  • 2 tbsp olive oil
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp good quality salt
  • Pinch of turmeric (optional) for buttery colour
  • 1 tbsp nutritional yeast (optional) for a cheesy flavour

Instructions

  1. Put all ingredients into a high speed blender, liquid ingredients first
  2. Blend for about 1-2 minutes, until you get a béchamel-type consistency
  3. Pour into a pretty dish and refrigerate for 1 hour
  4. Enjoy! Spread on granary bread, melt over veggies, add in some herbs and garlic for a kick – play around and have fun!

    I find the recipe very useful, I shall make it very soon.
    In the article you mention Oona Bee Crudivine, and she mentions her website in the video.
    I was hoping to go to her site and find a recipe for the cheese she asked you to taste it in the video , which had walnuts in it.
    Unfortunately her website is no longer .
    I was wondering if you had an idea as to where I may obtain the recipe for the cheese.

      Hi John! So glad that you enjoyed the recipe! Sadly, Oona’s cheese recipe is only in one place, and that is her head! She made the best vegan cheese ever, but I think she might be focusing on other projects at the moment.
