The inspiration for these delectable bites of goodness came when I was exploring my parents’ beautiful seaside town in Devon, England. On a walk with my little nieces, we stumbled upon a lovely little café called Lollie Bean. Which – joy of joys – sold homemade vegan energy balls. They were absolutely delicious and a real life saver for my grumbling tummy, so I just had to ask for the recipe.

Armed with the ingredients list, we had great fun making a mess in the kitchen and then sharing our creations with the rest of the family. And back in Paris, I had even more fun playing around with the recipe, and tried baking them in the oven, too. (I’m an incorrigible cookie monster.) They were even more delish – crispy on the outside, chewy on the inside. Yummm. So we decided we just had to share this recipe with you.

These cookies are filled with good fats and omega 3s, in addition to being delectable. And the recipe calls for simple ingredients – I certainly make sure I always have them all in my pantry, for drop-of-a-hat cookie parties.

Devonshire Coconut Chews

They're all the more tasty if you leave them to harden in the fridge for an hour or so. Yum...

Ingredients

  • 1 cup oats
  • 1/2 cup ground flaxseed
  • 1 cup desiccated coconut
  • 50g dark chocolate, chopped
  • Pinch of salt
  • 1/2 cup peanut butter
  • 1/2 cup brown rice syrup/agave syrup

Instructions

  1. Mix the dry ingredients together
  2. Add the wet ingredients (peanut butter and syrup)
  3. Mix into a delightfully moreish cookie dough
  4. Let the batter sit for 10 minutes to an hour. This makes the batter much more manageable for cooking forming.
  5. Form dough into palm-sized cookies
  6. Bake in the oven at 180 C/375 F for 8 mins
  7. Leave to cool. Enjoy!

    Hey Veggie-buddies! I have a question: are the ground flaxseeds dry when you first put them in? since you mentioned that they’re a great egg substitute when you add a bit of water I was wondering…also is there an emergency substitute for brown rice syrup (like maple syrup??) I want to make these TODAY and it’s sunday so the stores that would carry the rice syrup are cloooosed…

      Hey Barbara! So happy you’re trying the recipe out – hooray! The flax goes in dry (sorry for the confusion) and maple syrup would be absolutely divine I’m sure. Hope you enjoyed them!

    Hi Chloe and Anne,, I just wanted to thank you again for this recipe, it’s become a STAPLE, in its many many versions, and there are actors at some of the studios who tell me they won’t come in UNLESS I bring some of these cookies with me. The great thing is you can change it: I’ve made versions without chocolate (just added muscovado sugar and 3 big tablespoons of jam instead of rice syrup) ; and recently found a way to make them very soft and super chewy: I soak 2 TBSP chia and a bit of ground flax AND the oatmeal in half a cup of almond milk before mixing in the rest of the ingedients (I actually stumbled on this idea when I had some leftover cooked oatmeal I threw in one day) and that replaces eggs in the best way ever. So thank you AGAIN for this recipe: I can’t mess it up!! It always turns out yummy!!
