Vegan + Gluten-Free | Chocolate Chip Cookies | Healthiest Ever!

This recipe has been a long time coming.

Maybe it’s because I had to recipe test several iterations. *grin*

Maybe it’s that I’m having a really hard time filming content for you when I have to work six or seven days a week.

Maybe it’s because that whenever we wanted to film it was already dark.

Whatever the case may be, it was worth the wait.

Well, actually, you’ll have to tell me… (You will, won’t you? And tag me? @veggiemagnifique )

Vegan and Gluten-Free?

Now, I know what you’re thinking…

Gluten-free stuff can sometimes taste a little… off. Let’s just go ahead and say it. Sorry to my GF pals out there, but sometimes especially when vegan meets gluten-free, everything just falls apart.

Not so today.

No. Today, the ground almonds mixed with the nut butters and maple syrup blend marvelously in a marriage of pure chewtastic delight. It’s not dry or tasteless or… bizarre. It’s nutty, complex, chocolatey, and with a perfect touch of salt – which is how I like it. πŸ™‚

Can Cookies be Healthy?

Look, let’s be honest, most cookies are 100% not healthy. Even the vegan kind. They’re usually filled with oils and white sugar. And though it may be a stretch to say that today’s chocolate chip cookie recipe is “healthy” per se, it is WAY ahead of the curve… so much so that I’m calling these chocolatey chews the healthiest cookies out there. And I stand firmly behind it.

Why? Because these cookies have:

  • calcium
  • vitamin E
  • zinc
  • iron
  • protein
  • plant lignans
  • niacin
  • healthy fats
  • etc.

Though, as a health coach, it is my duty to inform you that these are indeed rich, and maybe you should cap it at… four a day. That’s what I do, anyway. (I make ’em small-ish, I swear!)

5,000 on YouTube!

So, guess what… I talk more about this in the video but I am so overjoyed to report that we have passed 5,000 subscribers on YouTube! This has been a… ahem, a slow build, but I’m thrilled to be celebrating this huge milestone for Veggie Magnifique. (I’m especially grateful to you, dear reader, because you’re here reading this on the blog, so I love you the most.)

Vegan + Gluten-Free Chocolate Chip Cookies

Easy and healthy? Chocolatey and nutty? YES! These tasty morsels are going to make you reinstate the cookies and oat milk snack all the world thinks American kids have after school. To which I say, hear hear!

Makes about a baker’s dozen, depending on how big you make your cookies.

  • 1/4 cup tahini
  • 1/4 cup cashew butter (or nut butter of preference)
  • 5 Tbsp. maple syrup
  • 1/4 tsp. baking powder
  • 1 Tbsp. ground flaxseeds
  • 1 cup ground almonds or almond meal
  • 1 Tbsp. of vanilla extract
  • 1/2 cup (or thereabouts) of vegan chocolate chips
  • a pinch or two of salt
  1. Preheat your oven to 180C/355F degrees.
  2. Grind your almonds and flax seeds if they’re not already ground.
  3. Mix everything in a bowl. (Seriously – it’s that easy.)
  4. Roll the batter into little balls and pop them on a baking sheet.
  5. Now the fun part β€” smash ’em down with the bottom of a glass. The cookies don’t really expand much so you don’t need that much room in between cookies.
  6. Bake the cookies for 8-1o minutes. (If you like them ΓΌber chewy, opt for 8 min. I like ’em at about 9 min.)
  7. The cookies will be a bit soft when you take them out. Let them cool for a few. They need to set! Be patient!
  8. Enjoy them dunked in oat milk or why not stuff some soy ice cream in between for a lil’ ice cream sammy? πŸ™‚
