These waffles aren’t just a yummy meal, they’re part of our family’s weekly rhythm.

Waffle day is serious business in our house.
It’s on the meal plan calendar, so it happens every single week without fail. Now, you might be thinking, “How does a mama to two energetic toddlers manage waffles every week?” And here’s how — these waffles are easy-peasy, my friends. Once you’ve got the recipe down, it’s badda bing, badda boom, breakfast (or brunch) is served. (Having several recipes that you can whip up without recipes is key if you happen to be a busy mama like me.)
Not only are they simple to whip up, and toddler approved, but they’re also surprisingly nutritious as far as waffles go.
What makes these waffles stand out isn’t just their flavor or texture — it’s the thoughtful ingredients that pack a nutritional punch. The combination of bread flour and almond flour is key. Bread flour adds extra protein, giving your waffles more staying power, while almond flour brings healthy fats, fiber, and a subtle nutty flavor. (And fluffiness that’s simply divine!)
Then there’s the magic of the “buttermilk.” By curdling soy milk with apple cider vinegar, you not only achieve the ideal batter consistency but also add a dose of plant-based protein and calcium from the soy milk. This recipe is a perfect example of how simple, wholesome ingredients can come together to create something both delicious and nourishing.
And let’s not forget how customizable these waffles are. Whether you’re adding fresh fruit, sprinkling in some chocolate chips, or topping them with a dollop of plant-based yogurt, this recipe is your canvas for creativity. Even better, it’s free of eggs and dairy, making it an even healthier (and kinder) choice for brekkie.
These waffles are everything you want in a breakfast: crispy, fluffy, and incredibly easy to make. Whether it’s a busy weekday or a cozy weekend morning, this recipe fits right in.
