Imagine you're on a beach. Ocean breezes are tickling your hair, the sun is high, and you're cozy in the shade with an iced lemonade and a plate of fresh, vibrant, crunchy and chewy, veggie-filled sushi rolls.

Ocean breezes are tickling your hair, the sun is high, and you’re cozy in the shade with an iced lemonade and a plate of fresh, vibrant, crunchy and chewy, veggie-filled sushi rolls.

Mmmmm, la vie est belle.

Guess what? It’s not a dream… you can have this beach-sushi fantasy! (Well, everything minus the beach and the lemonade, but you can figure out that part, right?)

Today we’re going to take care of the sushi part.

Special Guest: Archcena – The Curious Mango!

Today we have a special guest on Veggie Magnifique, Archcena from The Curious Mango! Archcena is a lovely mom-to-be, vegan chef, and is currently training in the ancient mind-body healing philosophy of Ayurveda.

Archcena was kind enough to share one of her favorite recipes that she’s been enjoying during her fully plant-based pregnancy, raw vegan sushi! And guys… these makis are way umami. Salty, sweet, crunchy, chewy – they hit all the sensory spots and check all the nutrition boxes, too.

Also, Archcena thought it would be a great idea to use cauliflower for this recipe since, in addition to being cooling as the weather heats up, it’s also a good source of protein, potassium, phosphor, fiber and folic acid. (But, fear not if you’re not in Club Cauliflower, you can certainly use brown rice, since it provides other nutrients such as protein, calcium, and fiber!)

Here are some of the health benefits of the colorful veggies we're adding:

  • Calcium (spinach, tahini, cilantro)
  • Protein (tofu, cauliflower)
  • Folic acid (cauliflower, greens, tofu, tahini)
  • Iron (sesame, greens, tofu)
  • Iodine (nori sheet)
  • Vitamin C (bell peppers, avocado)
  • Healthy fats (avocado)

These makis are vegan, raw, gluten-free, and sure to please your entourage… be they plant-eaters or not, pregnant or not. Who can resist summatime sushi!?

So let’s learn how to make this simple and delicious recipe and get your beach-sushi fantasy popping! (Or maybe this is just my fantasy?)

Sushi Recipe for Pregnant Ladies | Raw & Vegan | The Curious Mango

Raw Sushi for Pregnancy (or not).

This recipe makes 20 makis, so depending on your appetite, and whom you're sharing it with, you may want to double the recipe!

Ingredients

  • 4 nori sheets
  • 1/2 of a cauliflower head (or brown rice or quinoa if you prefer)
  • Choice of veggies such as avocado, cucumber, carrots, bell peppers, zucchini, tofu, marinated mushrooms, soy marinated asparagus, etc.
  • Baby spinach leaves
  • optional: cilantro leaves
  • 2 Tbsp soy sauce (tamari)
  • 1 Tbsp date sugar or agave syrup

For the sauce:

  • 2 Tbsp tahini
  • Juice from 1/2 a lemon
  • 1 tsp tamari
  • Optional: diced ginger and rice vinegar

Instructions

  1. Make your cauliflower “rice” either with a food processor, a blender on low speed, or with a good old fashioned grater. Then mix it with 2 Tbsp soy sauce, and 1 Tbsp date/agave syrup.
  2. Slice the veggies into thin strips.
  3. Place a nori sheet in front of you, rough side up, lines horizontal.
  4. Spread 2 Tbsp cauliflower, and add spinach leaves if you have some, leave an inch gap on the edges.
  5. Layer the vegetables on the bottom, and roll almost to the top, but leave an inch at the end.
  6. Use your finger to put some water on the edge to make it stick together.
  7. Carefully cut them with a wet and sharp knife.
  8. For the sauce, just mix all the sauce ingredients in a little bowl or jar.
  9. Sauce meet sushi, sushi meet sauce. Mmm!
